A Simple Beef Stroganoff

A simple Beef Stroganoff, long, slow cooked and delicious!

Beef Stroganoff has lost its luster due to so many taking shortcuts. Traditionally done, Beef Stroganoff is one of the most delicious meals you can make. It is a remarkably simple dish. It requires good ingredients and proper technique and time. To do it correctly it takes time to develop the flavors. You cannot shortcut the time needed without seriously compromising the result.

The long slow cook required for this dish requires a beef cut that will stand up to this treatment without falling apart. You also want a flavorful cut of meat. Rump roast is the preferred cut, but requires a specific technique to prepare. Cut slabs ½ inch thick then cut strips about the same width from the slabs. The onions should be sliced medium thick.

Browning the meat should be done to develop the flavor, but don’t cook so long as to cook through. When you sauté the onions use them to wipe up the fond from browning the meat.

Taking the time and effort to do Beef Stroganoff the old fashioned way will repay you with a dish that you will make often for company, it’s that good! It will also give you a new appreciation for some of the older recipes that took time to make.

Beef Stroganoff

1 1/2 pounds rump roast – cut in thin strips
1/4 cup butter
1 cup onions – sliced
1 cup sour cream
salt and pepper – to taste
noodles or rice

In a skillet, brown meat in butter. Remove meat and sauté onion in butter.

Return the meat to the pan, cover and simmer 45 minutes. Stir often. Check to make sure meat and onion are not sticking to pan, and add a little water at a time to prevent it.

Blend in sour cream, and continue simmering for an additional 30 or 45 minutes until the meat is tender.

Serve over rice or noodles.
